Natural Farming Practice: Natural farming practice is what farmers have been doing for thousands of years before industrialized agriculture employing chemical fertilizer and pesticide became the accepted standard.  The organic movement is simply our rightful demand to have real food, produced with zero amount of harmful ingredients.
 
Natural farming in tea entails organic fertilizer and compost to ensure minimal damage to the ecology and harmful health impact to the tea trees.  The saying “You are what you eat” applies to not just humans, but all living organisms.  By eliminating harmful chemicals, tea trees will grow healthier and produce more flavorful leaves.

Infused tea, or in-cha 窨茶, comes from a heritage of 1000 years that originated in Song Dynasty of Imperial China.  The production process demands closest attention to the smallest details; the complexity is similar to the artistry required in making exceptional oolong tea.
 
Starting with selection of different teas as base and various flowers and fruits as fragrance source, only premium grade is used to ensure a high quality foundation.  During the actual infusion process, temperature, humidity, and length of each infusion are carefully controlled and monitored such that the tea leaves can fully absorb the fragrance released from the flowers or fruits.  To achieve depth of fragrance and, ultimately, the flavor, into the leaves, they must go through the same process more than once with new batch of flowers or fruits for each additional infusion.
 
There are several differences between properly infused tea and most flavored or blended tea on the market today.  The dry aroma of a properly infused tea should be pleasingly distinct and natural as the fresh flowers and fruits used for fragrance source, whereas the wet aroma should retain the same characteristic and permeate the surrounding.  The taste should be a delicate and exquisite balance of fragrance and tea flavor with the finish a little more emphasis on the latter.  A properly infused tea will stand multiple steeps without losing either the fragrance or the flavor.  Sometimes they will even last longer than the tea itself.
